I have this question:

The price of one share of a stock fell $3 each day for 12 days.

would I set it up as 12 * -3=-36 or -3 * 12= -36? And they want the total change in price of the share of the stock would that be -36 or 36? Why?

Your thinking is good but a problem like this depends on the wording of the problem. Notice that it says "fell $3 each day." It didn't say "fell -$3 each day." In other words the negative aspect is given in the word "fell". So, you know it is going down. Now, they want the total change in price. Notice that the word "change" does not indicate in which direction. So, you would have to answer that the change was -36 dollars. If they would have asked "how many dollars did it fall?" or "What was the total loss?" you would answer without the negative sign, in my opinion. In other words, the loss was $36. You could also say the gain was -$36.

Positive or negative value depends on definitions provided in your textbook/class notes. In general, increase is indicated as positive change, whereas decrease as negative change. But you need to confirm it through your textbook or class notes.
