even though katex.org works just fine with it. For example, I am trying to use \newcommand{\ee}[1]{e^{-#1}} below:

[math]\newcommand{\ee}[1]{e^{-#1}}[/math][math]y=\ee{x}[/math]

Huh. I wouldn't have thought that \newcommand would be included in the supported Math "library." (That's the wrong term, but I don't know what other word to use.) \newcommand is more of general LaTeX operation rather than something in the Math library. I mean, I use it in TikZ all the time, but outside of that most of the documentation I've seen that uses it is oriented along the lines of text work.
