How many crops of celery do I need & at what frequency do I plant in order to harvest 1 per day?

I would like to harvest a large celery crop once per day to create celery juice. If it takes approximately 3 months from seed to harvest, how many crops and at what frequency do I need to plant for one per day?

If you want one each day, then you need to plant one each day, no? What am I missing? Make your juice, and plant a replacement seed. (If you want a break from the juice, braised celery is nice. I had some last night.)
