what is the formula for finding the longest side of a triangle when you know the shorter sides

There is none. You need to have more information, such as the measure of an angle or the location of the end points of the sides on a Cartesian coordinate graph.

You need at least the size of one angle.
Else longer side can be more than 1 value; simple example:
3-8-9
3-8-10

Are you maybe referring to the special case wherein the triangle is a right triangle...?
