Here is what I would have done:

\(\displaystyle x^2+6x-y^2+9 = (x^2+6x+9)-y^2 = \underbrace{(x+3)^2-y^2}_{\text{difference of squares}} \)\(\displaystyle = (x+3+y)(x+3-y)\)

To the 2nd problem: You should know that \(\displaystyle x^3-1 = (x-1)(x^2+x+1)\)
