Alice asked the white rabbit if she could help...
‘As a matter of face you could’ he replied.
‘Can you tell me the time? My pocket watch takes on 5 mins for every hour and I haven’t reset it since 8pm yesterday evening’

Alice didn’t have a pocket watch of her own but she thought she might be able to help

‘What time does your pocket watch say it is now’ she asked.

‘twelve twenty-eight’ the rabbit told her.

what time did that mean it really was?

please explain with working out

And you can start by telling me what "takes on 5 mins for every hour" means. That's not quite in my vocabulary.

Hint: 1st you have to decide if it is 12:28 am or 12.28 pm. Let's assume it is 12:28 am

The watch takes on 5 minutes per hour.

at 8:00pm watch says 8:00pm
at 9:00pm watch says 9:05 pm.
at 10:00 pm watch say 10:10 pm
at 11:00 pm watch says 11:15 pm
at 12:00 am watch says 12:20 am
at ???? watch says 12:28 am

therefore 12.28pm makes 11.13am was my guess

but answer book says 11.12

There are a whole collection of those such books. Here is one of the best, if not the best, because it is very early.
The ANNOTATED Alice by the legendary Martin Gardner. I have a hardback 1960 first edition. The reason this thread caught my attention I took a double major mathematics & philosophy. My college allowed me to write one theists (if I agreed to sit for both the written & oral comps)
So I worked on Gardner's book(as well as related topics). But I cannot find a discussion of time in the book.

You say:

Remember 15 minutes in one watch is NOT 15 minutes in the other watch

Can you write an equation for the elapsed time on the watch as a function of elapsed time in reality?

Then solve for the real time.

No guessing is needed. And the book is right.
 
We know it takes 1 hour of real time for the watch to be off by 5 minutes. Then after how many minutes in real time is the watch off by just one (additional) minute?

? I haven’t done maths since A levels - I’m doing this puzzle book for cognitive therapy after contracting covid-19, I have no idea what you are asking I’m so sorry

Have you ever solved a Sudoku puzzle? If you have, you know that guessing would not get you far. The digits you filled in at every step were the result of logical thinking. Same here. No guessing needed.
