Is there interest in researching about casino game randomness?

Hi, apologies if this is the wrong area, but I believe this falls under "probability / statistics".

I am not a math guy, lets put it that way. I work for a company that has stored game round data from a live casino game provider. About a year of data for different variants of casino games, like roulette. The data is 100% accurate and as real as it gets, with real croupiers spinning a roulette wheel and throwing the ball, and players betting digitally through a live stream. The results are then stored.

It is my understanding that this data could be useful for mathematical research purposes. Maybe to investigate statistical bias due to the "loosing / winning streak" mentality many gamblers have. Or run some chi-square test. Maybe a unique opportunity to use actual real world data from an untraditional source in a research paper.

I would appreciate some opinions from people who actually are working or studying in this field. Basically, in what areas of mathematical / statistical research would this type of data be useful?
